- Vanillin is a phenolic aldehyde with the molecular formula C8H8O3 and a molecular weight of 152.15. Chemically it is 3-methoxy-4-hydroxybenzaldehyde, and its distinctive aromatic character makes it the classic representation of the vanilla note. Although natural vanillin can be extracted from cured vanilla beans, virtually all commercial vanillin used by the food industry today is produced synthetically — most commonly from guaiacol or lignin-derived feedstocks — which ensures consistent quality, stable supply and cost efficiency.
- Physically, vanillin appears as a white to slightly yellow crystalline powder or needle-like crystals with a melting point of 81.0–83.0 °C and a boiling point of approximately 285 °C. It is freely soluble in ethanol (1 g dissolves completely in 2 mL of 95% ethanol at 25 °C, forming a clear solution) and soluble in ether and chloroform, while its solubility in water is limited (approximately 10 g/L at 25 °C) and increases with temperature. Because vanillin is heat-stable under normal baking and processing conditions, it is suitable for a wide range of food applications.
